Yes, watermelon is made up of mostly water, but it’s also jam-packed with lots of nutrients, like vitamins C, A and B6, plus potassium, amino acids, and antioxidants. What makes this healthy summer salad so delicious is the flavor combination of the watermelon, feta cheese and the champagne dressing.
Just start with a bed of your favorite salad greens, add whatever veggies your heart desires, some diced watermelon, sprinkle with feta cheese, and then to make the amazing dressing, all you need is:
1/4 Cup Champagne Vinegar
1 Tbsp. Honey
1/2 tsp. Dijon Mustard
1/2 Cup Extra Virgin Olive Oil
2 tsp. of minced shallots (or you can use minced garlic or a combination of both!)
Whisk ingredients in a bowl, or pour into a glass dressing bottle and shake until well blended. Pour over your salad, toss, and enjoy! And when you’re done, the liquid mixture of the dressing with the watermelon juice in the bottom of the salad bowl is yummy enough to drink! (Which I’m not ashamed to say I do, every time!) 🙂
